Opened in 2015 by chef Diego Rossi and Pietro Caroli, Trippa is the modern Milanese trattoria that turned the humble 'fifth quarter' into a cult. Rossi cooks offal and seasonal produce with rigour and irreverence, from his signature fried tripe eaten like chips to the silky tagliatelle al burro that regulars swear by.
