Seleccionado por PortaMi
Opened in 1998 by chef Michele Valotti in the hills above Brione, La Madia is a rural trattoria overlooking the Franciacorta valley where 'variable and imperfect' cooking follows the seasons. The kitchen leans on foraged herbs, ancient stone-ground grains, in-house fermentation and produce from its own garden, with 7- and 10-course tasting menus that list the origin of every ingredient and its producer.
